Kawara Soba is a beloved regional specialty of Yamaguchi Prefecture.

At Yanagiya, we take pride in every ingredient—from our fragrant tea-infused buckwheat noodles (cha-soba) and handmade shredded egg crepes (kinshi tamago) to umami-rich beef and fresh aromatics. Each dish is carefully assembled and served on a piping hot Sekishu-gawara (traditional roof tile).

The History of Kawara Soba

The origins of Kawara Soba date back to the Satsuma Rebellion of 1877, when legend says Satsuma soldiers used ceramic roof tiles (kawara) to cook meat and wild vegetables during the war. Inspired by this tale, the dish was officially created in the mid-Showa era in Toyoura, Shimonoseki City.

Today, Kawara Soba is a beloved specialty throughout Yamaguchi Prefecture. Beyond being a restaurant favorite, it has become a cherished home-style staple.

How to Enjoy Kawara Soba

Follow our recommended steps to fully experience the variety of flavors and textures in this unique dish.

1. Savor the Original Flavor
Start by tasting the noodles without any condiments. Dip the tea-infused noodles (cha-soba) and savory toppings into our signature sweet dipping sauce to enjoy their natural aromas.

2. Add a Refreshing Zest
Next, place the lemon slice into the sauce for a bright, refreshing flavor. We also recommend adding the Momiji-oroshi (spicy grated radish).

3. Enjoy the Crispy Texture
As time passes, the heat from the tile will slowly toast the noodles. Listen for the sizzle and enjoy the delightful crunch of the fragrant, golden-brown “okoge” (crispy noodles) that form against the tile.

Caution: High Heat
The roof tile is extremely hot. Please be very careful not to touch it while eating.
